Is pak choi healthy for children?

Pak choi, also called bok choy is part of the same family as kale and broccoli and, just like its family members, it has a very impressive nutrition profile. It's a source of fiber and vitamins, such as vitamins A and K. But it's especially high in vitamin C, which makes this a great vegetable to eat together with iron rich foods, since the presence of vitamin C increases the intake of iron. It also contains an impressive amount of minerals and antioxidants.
