Eggplants are low in calories and contain a good amount of vitamins (mainly C and K), minerals and fiber. They're also rich in antioxidants which help protect your little one's body. Once cooked eggplant has a very soft texture, so it's definitely baby proof. Eggplants have a slightly bitter taste so it's a great way to broaden your baby's palate.
Cou can roast eggplants in the oven at 180 C. Remove the peel and mash the flesh into a puree. You can also serve grilled eggplant slices or use them in a lasagna. The skins are quite though, so make sure to chop them very finely enough or to just remove them.
