Eggplant & chickpea stew
This mediterranean flavoured vegetarian dish and is super nutritious. Blend everything well for your 6+ month old. If your baby is 9 months or older, mash it lightly.

Ingredients for 2 portions
Preparation
Drain the chickpeas.
Chop the eggplant into 1 cm cubes.
In a pan, bring some olive oil to a medium heat. Add the eggplant and the spices and stir well for 2 minutes. Then add the canned tomatoes.
Let it simmer, with the lid on, for 10 minutes. Add the chickpeas and let it simmer for another 5 minutes. Make sure the eggplant is nice and soft.
Stir through some yoghurt before serving.
