Veggie summer rolls
Great for, well, summer! They're packed with fresh herbs and vegetables, but kids love them, mostly because of the sweet chilli sauce you serve them with.

Ingredients for 4 rolls
Preparation
Mushrooms
Chop the mushrooms into medium sized pieces and sautée in some sesame oil.
Carrots & herbs
Peel the carrots, grate them and chop the herbs.
Rice paper
Soak the rice paper in lukewarm water for about 5 seconds, until it's soft.
Spread it open on a clean surface and scoop 2 tablespoons of mushrooms in the middle of the top half of the paper. Add a tablespoon of carrots on top and finish with a tablespoon of herbs. Now fold over the bottom, then one side and roll towards the other side. Serve with the sweet chili sauce on the side.
