Great for, well, summer! They're packed with fresh herbs and vegetables, but kids love them, mostly because of the sweet chilli sauce you serve them with.



Ingredients for 4 rolls

  • 4 rice papers

  • 2 tbsp herbs (mint, coriander, basil or parsley are great options)

  • 4 big shiitake mushrooms

  • 1 tsp soy sauce

  • 1 carrot

  • 2 tbsp sweet chili sauce (this is optional, but not really)


  1. Mushrooms

    Chop the mushrooms into medium sized pieces and sautée in some sesame oil.

  2. Carrots & herbs

    Peel the carrots, grate them and chop the herbs.

  3. Rice paper

    Soak the rice paper in lukewarm water for about 5 seconds, until it's soft.

  4. Spread it open on a clean surface and scoop 2 tablespoons of mushrooms in the middle of the top half of the paper. Add a tablespoon of carrots on top and finish with a tablespoon of herbs. Now fold over the bottom, then one side and roll towards the other side. Serve with the sweet chili sauce on the side.
