Loaded sweet potato with meat substitute and sour cream

This dish tastes a bit like a nacho bowl, but it's much healthier. You can change this vegetarian recipe and use minced chicken or pork instead.

Ingredients for 1 portion

  • 1 sweet potato

  • 0.5 avocado

  • 1 tsp coriander, freshly chopped

  • 1 tsp sour cream

  • 30 g meat substitutes like seitan (you can also use minced chicken or turkey)

  • 0.25 tsp paprika powder (smoked)

Preparation

  1. Sweet potato

    Bake the sweet potatoes in a 180°C/350°F oven for about 45 minutes to an hour, depending on how big the sweet potato is. You should be able to easily stick in a fork. Once cooked, remove the peel.

  2. Avocado

    Peel the avocado, remove the stone and cut into cubes.

  3. Meat substitute

    Cook the meat substitute together with the smoked paprika powder in a pan with a teaspoon of olive oil.

  4. Coriander & sour cream

    Arrange the meat on top of the sweet potato and top with the avocado cubes, chopped coriander and sour cream

You will need to add:

  • Finely chopped red chili to sprinkle on top
  • Salt
  • Black pepper
  • An extra serving of sour cream or yoghurt
