Vegetarian baby curry
This is a great starter curry. Mild but fragrant flavours and completely vegetarian.
Ingredients for 4 portions
Preparation
Peel the pumpkin and remove any seeds. Cut into small cubes.
Heat up a teaspoon of olive oil in a deep pan. Fry the pumpkin cubes together with the spices for 2 minutes. Stir so it doesn't burn.
Dice the tomatoes and add to the pumpkin and spices. Let it cook for 2 minutes.
Now add the coconut milk and let it simmer for 10 minutes.
Now add the peas and let it simmer for another 5 minutes. Make sure the pumpkin is soft.
Cook the rice according to the instructions on the package. And serve with the curry. For the littlest eaters, mash everything well with a fork.

All you need to do is add some of your favourite curry paste for some extra flavour and spice.
