Vegetarian baby curry

This is a great starter curry. Mild but fragrant flavours and completely vegetarian.

Ingredients for 4 portions

  • 100 g peas

  • 200 g pumpkins

  • 400 ml coconut milk

  • 4 tomatoes

  • 150 g rice

  • 1 tsp cumin

  • 1 tsp curry powder

  • 0.5 tsp ground coriander seeds

  • 1 pinch chili powder

Preparation

  1. Peel the pumpkin and remove any seeds. Cut into small cubes.

  2. Heat up a teaspoon of olive oil in a deep pan. Fry the pumpkin cubes together with the spices for 2 minutes. Stir so it doesn't burn.

  3. Dice the tomatoes and add to the pumpkin and spices. Let it cook for 2 minutes.

  4. Now add the coconut milk and let it simmer for 10 minutes.

  5. Now add the peas and let it simmer for another 5 minutes. Make sure the pumpkin is soft.

  6. Cook the rice according to the instructions on the package. And serve with the curry. For the littlest eaters, mash everything well with a fork.
