Have some leftover sweet potato puree? No problem! This sweet potato pie takes minutes to make. Pop it into the oven and spend some quality time with your little one.

Ingredients for 10 portions

  • 500 g sweet potatoes

  • 1 pie crust

  • 3 eggs

  • 50 ml milk

  • 100 g melted butter

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 75 ml maple syrup

Preparation

  1. Cook the sweet potatoes, whole with the skin on, in boiling water until soft. This should take about 40 minutes, depending on the size of the sweet potatoes.

  2. Once cooked, allow the sweet potatoes to cool down and remove the skin.

  3. Mix all ingredients together until you get a smooth mixture.

  4. Place the pie crust in a pie tray. Pour the sweet potato mixture into the pie crust and cook one hour in a 175°C/350°F oven.
