You will need to add:
- 1/2 banana or a handful of red fruit
- 2 tablespoons of yoghurt
- 2 teaspoons of maple or agave syrup
- 1 tablespoon of mixed seeds or nuts
These sweet potato pancakes are probably one of the most popular recipes we have. They are so easy to make and every kid seems to love them. It's a good thing they don't contain any sugar either!
Potatoes
Preheat the oven at 180°C/350°F and cook the potato (whole, peel still on) for 45 minutes to an hour. Your fork should go through easily when they're cooked.
Eggs & cinnamon
Remove the skin of the potatoes and mash them with a fork until completely smooth. Add the eggs and cinnamon.
Bake
Add some neutral tasting oil in a pan (canola, corn, peanut, sunflower) and bring to a medium heat. With a ladle, scoop little pancakes onto the pan. Use your fist as a reference for the pancake's size. Bake for about 3 minutes on one side, flip over and bake for another 3 to 5 minutes on the other side.
These pancakes are a great breakfast option for adults as well. We just have to add a bit of extra nutrition to start to day.
