Spinach bulgur fritters

These fritters are nice and crunchy and make a good snack. Great if you want to boost your baby's iron levels!

Ingredients for 2 portions

  • 125 g spinach

  • 50 g bulgur

  • 25 g soft goat's cheese

  • 40 g bread crumbs

  • 2 tbsp olive oil

Preparation

  1. Cook the bulgur as indicated on the package.

  2. Poor some boiling water on top of the spinach and drain. Let as much water drain out as you can.

  3. In a food processor or blender, add all the ingredients and blend to a paste.

  4. Pour the olive oil in deep pan and bring it to a medium heat. Fry the fritters on one side until they're golden, then flip them. Wait until the other side is golden as well and bring down the heat to low. Let them sit another 2 minutes in the pan to cook through completely and you're done!
