Green bean and tomato stew

Spicy mediterranean tomatoes & beans

This stew is just spicy enough for your 10 month old. We want to build it up slowly so your baby can get used to spice. You can serve this with fish, meat or crispy tofu.

Ingredients for 2 portions

  • 100 g green beans

  • 4 tomatoes

  • 1 pinch chili flakes

  • 1 tbsp olive oil

  • 0.5 tsp oregano

Preparation

  1. Chop the ends of the green beans.

  2. Peel the tomatoes by making a little incision on top and submerging them for 10 seconds in boiling water. This will allow you to peel off the skin very easily.

  3. In a saucepan, add some olive oil and bring it to a medium heat. Add the beans and tomatoes together with the chili flakes and oregano. Let them simmer for 2 minutes and then add 5 tablespoons of water.

  4. Let it simmer until the beans are soft and the tomatoes break apart. If you notice it getting a bit dry, add a splash of water.
