Root vegetables with coconut & coriander

This combination works incredibly well. We add a bit of coconut oil for extra energy.

Ingredients for 1 portion

  • 0.5 parsnip

  • 0.5 turnip

  • 2 tbsp coconut milk

  • 1 tbsp chopped coriander leaves & stems

  • 1 tsp coconut oil

Preparation

  1. Peel the parsnip and turnip and chop them into medium sized cubes.

  2. Steam the parsnip and turnip or cook in boiling water until soft.

  3. Blend together with the coconut milk, coconut oil and coriander.

These ingredients can also be used to make a tasty soup. Add water and your favourite curry paste and you have everything to make a fragrant soup.
