We're pretty confident you will be making some extra of these just for yourself. These breakfast buns contain pumpkin and apple and taste like brioche, but even better. Even better still with some berry puree drizzled over the top.

Ingredients for 8 buns

  • 100 g pumpkins

  • 1 apple

  • 150 g plain flour

  • 1 tsp baking powder

  • 0.5 tsp cinnamon

  • 3 eggs

  • 0.5 tsp vanilla extract

  • 2 tbsp vegetable oil

  • 1 tbsp maple syrup or agave syrup

Preparation

  1. Peel the pumpkin and cut it into small cubes. Steam these until soft and mash them until completely smooth.

  2. While the pumpkin is steaming, peel an apple and grate it.

  3. Mix the flour with the cinnamon and baking powder.

  4. Mix the eggs with the vanilla extract and honey.

  5. Stir the apple through the pumpkin mash and then stir through the egg mixture.

  6. Now stir through the flour and cinnamon mixture and make sure there are no lumps. Add the vegetable oil in the end.

  7. Pour into individual tins and bake for 25 to 30 minutes in a 180°C/350°F oven. Make sure the tops are golden and a toothpick comes out clean. This means there's no uncooked batter in the middle.
