This potato paratha shows the versatility of potatoes. It takes a simple potato mash to the next level. Fresh herbs and fragrant spices makes this an interesting and fun dish to serve to your kids.

Ingredients for 2 parathas

  • 100 g potatoes

  • 1 cm ginger

  • 1 tbsp herbs any fresh herbs like parsley, coriander, dill,...

  • 40 g plain flour

  • 0.5 tsp cumin

  • 0.5 tsp curry powder

Preparation

  1. Make mashed potatoes by peeling them and cooking them in boiling water until soft. Use a potato masher to mash them really well.

  2. Peel the ginger and grate it finely. Chop the herbs.

  3. Add the flour, cumin, curry powder, ginger and herbs to the mashed potatoes and roll it into a ball. Divide the ball in two.

  4. On a floured surface roll the two balls until they are about half a cm thick.

  5. Put the olive oil in a pan and bring to low to medium heat. Cook the first side for 1 to 2 minutes or until you see it becoming golden. Then flip and do the same on the other side. Make sure there are no uncooked spots.

Easy, just season your paratha with salt and some extra curry powder and add a bit of finely chopped red chili.
