This pudding is nutritious and tasty. It's a great way to add some protein into your baby's fruit snack. The mint adds freshness to the dish. You can serve this as breakfast or as a snack.

Ingredients for 1 portion

  • 2 tbsp silken tofu

  • 1 slice pineapple (about 2 cm thick)

  • 2 mint leaves

Preparation

  1. Cut the pineapple into cubes.

  2. In a blender, mix the tofu, together with the pineapple and mint until smooth and you're done!

Mint flavoured pineapple carpaccio is a winner for dessert. Slice the pineapple very thinly and scatter the chopped mint over the top. Serve with vanilla ice cream.
