Fish curry

Peanut fish curry with rice noodles

Ingredients for 1 portion

  • 30 g rice noodles

  • 75 ml coconut milk

  • 1 tsp peanut butter

  • 0.25 tsp turmeric

  • 0.25 tsp curry powder

  • 20 g white fish like cod or haddock

  • 1 tbsp pea

  • 25 g green beans


  1. Cook the rice noodles according to the instructions on the package.

  2. Heat up the coconut milk, together with the peanut butter, turmeric and curry powder. Add the fish and the veggies to it so they can cook in the liquid.

  3. Once the fish is cooked and the veggies are soft enough, mix it with the rice noodles and mash it until you get a lumpy texture.

Also joining the table?

All you need to do is amp up the spice by adding your favourite curry paste. And of course, you can skip the mashing.
