Pasta with kale & walnut pesto

Kale is an incredibly healthy vegetable but not the easiest to introduce. This pesto is a good introductory dish, using avocado and walnuts for a creamier texture. If you can't find kale, you can use spinach instead.

Ingredients for 1 portion

  • 1 avocado

  • 4 kale leaves

  • 30 g pasta (a bit more or less depending on age and appetite)

  • 1 tbsp walnuts

  • 2 tbsp olive oil

  • 1 tsp parmesan cheese

Preparation

  1. In a large pan of boiling water, cook the kale for about 2 minutes, then drain and let it cool down.

  2. In a food processor, add the kale, avocado, walnuts and parmesan cheese. Blend it roughly by pulsing and then start adding the olive oil slowly.

  3. Cook the pasta as indicated on the package and stir it through the pesto. If your baby is 6 to 12 months old, you can blend the pasta along with the pesto to either make a smooth or chunky puree. If your baby is older than 1 year, just cut the pasta finely.

Easy, just season your pesto with salt, black pepper and some chili flakes.
