You will need to add:
- Garlic
- Black pepper
- White miso
- Parsley
This vegetarian pasta dish is a game changer. The sauce is creamy and full of flavour. And most of all, much more nutritious than a regular pasta alfredo.
Cashew sauce
Let the cashews soak overnight (or at least 2 hours in advance).
Blend the cashews together with the milk, oregano, black pepper and garlic powder. Blend for at least 2 minutes for it to become completely smooth and creamy.
Pasta
Cook the pasta according to the instructions on the box.
Mushrooms
Add some olive oil to a pan and bring it to a medium heat. Chop the mushrooms finely and add them to the pan. Cook for 5 minutes until they become soft.
Mix the pasta, the sauce and the mushrooms together and mash with a fork to get a chunky texture.
This dish only needs some minor tweaks to make it delicious for the entire family. You can leave the mushrooms a bit bigger and you can add some crushed garlic, black pepper and white miso to flavour the sauce. Finish with chopped parsley.
