Pasta with cashew sauce and mushrooms

This vegetarian pasta dish is a game changer. The sauce is creamy and full of flavour. And most of all, much more nutritious than a regular pasta alfredo.

Ingredients for 1 portion

  • 50 g cashew nuts

  • 40 ml milk (this can be cow's milk or almond)

  • 0.5 tsp oregano

  • 0.25 tsp garlic clove powder

  • 1 pinch black pepper

  • 30 g pasta

  • 4 mushrooms

  • 1 tsp olive oil

Preparation

  1. Cashew sauce

    Let the cashews soak overnight (or at least 2 hours in advance).

  2. Blend the cashews together with the milk, oregano, black pepper and garlic powder. Blend for at least 2 minutes for it to become completely smooth and creamy.

  3. Pasta

    Cook the pasta according to the instructions on the box.

  4. Mushrooms

    Add some olive oil to a pan and bring it to a medium heat. Chop the mushrooms finely and add them to the pan. Cook for 5 minutes until they become soft.

  5. Mix the pasta, the sauce and the mushrooms together and mash with a fork to get a chunky texture.

Also joining the table?

This dish only needs some minor tweaks to make it delicious for the entire family. You can leave the mushrooms a bit bigger and you can add some crushed garlic, black pepper and white miso to flavour the sauce. Finish with chopped parsley.
