Mushroom rice porridge

You can make this mushrooms and rice porridge with actual rice, or with baby rice cereal, whatever you prefer, or have left in your cupboard. Follow the cooking instructions on the package of rice cereal.

Ingredients for 1 portion

  • 1 (chestnut) mushroom

  • 1 tbsp rice

  • 1 tsp olive oil

Preparation

  1. Add some olive oil in a pan and bring to a medium heat. Cook the mushrooms until soft.

  2. Cook the rice in boiling water, as indicated on the package. You can slightly overcook the rice.

  3. With your fork or a blender, turn the mushrooms and rice into a soft puree and make sure there are no lumps. You can add some cooking liquid to make it less thick. Look for the consistency of marmalade. Finish with the olive oil.
