Mango rice pudding

Mango & coconut rice pudding

This is a great, creamy breakfast or snack. You can add some other fruit such as banana or berries, whatever is your little one's favourite. For the littlest eaters, make sure to blend or mash everything well before serving.

Ingredients for 2 portions

  • 20 g short grain rice

  • 200 ml coconut milk

  • 1 mango

Preparation

  1. Rice & coconut milk

    Cook the rice in the coconut milk. Don't be afraid to overcook the rice a bit, that's the point. Stir frequently and if you see the rice getting too dry at some point, feel free to add some more milk.

  2. Mango

    Peel the mango and cut into small pieces and stir through the rice pudding.

This rice pudding is not only tasty for babies. You don't need to change anything in this recipe to enjoy this pudding. If you have a real sweet tooth, you can always add some sugar, but the coconut and mango provide plenty of sweetness.
