This is a great, creamy breakfast or snack. The lychee gives it a very distinct flavour. You can also give this to younger babies but make sure to blend everything before serving.

Ingredients for 1 portion

  • 20 g short grain rice

  • 200 ml unsweetened coconut milk

  • 4 lychees

Preparation

  1. Rice & coconut milk

    Cook the rice in the coconut milk. Stir frequently so it doesn't stick to the bottom. Don't be afraid to overcook the rice a bit, that's actually a good thing.

  2. Lychee

    Peel the lychees and remove the stone. Blend until smooth and stir through the rice pudding when it's still on the fire. Cook for another 3 to 5 minutes until the texture of the rice pudding is perfect.

This rice pudding is not only tasty for babies. You don't need to change anything in this recipe to enjoy this pudding. If you have a real sweet tooth, you can always add some sugar, but the coconut and lychee provide plenty of sweetness.
