Jerusalem artichokes, or sunchokes, look a bit like ginger, but are actually quite similar to potatoes. They are great for beginning eaters. The sweet flavor will be not too far removed from the sweet milk your baby is used to.

Ingredients for 1 portion

  • 1 jerusalem artichoke

  • 1 tsp olive oil

Preparation

  1. Preheat the oven at 180°C/350°F and cook the Jerusalem artichoke (whole, peel still on) for 45 minutes to an hour. You fork should go through easily when they're cooked.

  2. Remove the skin as much as you can and mash them with a fork until completely smooth. Add the olive oil and you're done.

Also joining the table?

This puree is great with fish. Just add some milk, pepper and salt for extra flavour and a smooth texture.
