You will need to add:
- Salt
- Tortillas
- Optional: hot sauce
These fish sticks are super crunchy and the mango salsa will make you go "mayo, what's that?". You can also easily turn this into a fish taco.
Preheat the oven at 200C/390°F.
Cut the fish into fish sticks, roughly the size of two adult fingers.
Take 3 bowls. Put the flour and cayenne pepper in the first one. Whisk the egg and put it in the second one. In the third one you put the panko. Take the fish through all three bowls, first covering them with the flour, then with the egg and finally the panko, pressing it a bit so it sticks.
Heat some coconut oil or vegetable oil in a pan and fry the fish for about 3 minutes, flip them over cook for 3 to 5 more minutes. Make sure all sides are golden en the fish is cooked through.
Chop the mango and coriander finely and squeeze the lime. Give it a stir.
Perfect for taco tuesdays! Just season the fish with some salt for extra taste and place the fish and salsa in a small tortilla. Feel free to add some hot sauce.
