These endive cups are a fun way to let your child enjoy some fun finger food. The fig puree can also be spread on a piece of bread or can even be used as a sweetener on pancakes or other desserts.

Ingredients for 4 cups

  • 1 endive

  • 2 figs

  • 2 tbsp ricotta

  • 1 tsp honey or maple syrup

Preparation

  1. Endive

    Cut the bottom of the endive and pull off the outer leaves. If the inner leaves are stuck to the core, cut of the bottom part again and again as you remove more leaves. The core is very bitter so we leave that out.

  2. Fig puree

    Blend the figs with the ricotta and honey.

  3. Scoop the fig puree into the endive cups.
