This herby frittata can serve as a tasty and quick breakfast or lunch and a good way to sneak some vegetables into your child's diet.

Ingredients for 4 portions

  • 0.5 courgette

  • 2 tbsp herbs (mint, basil, parsley, dill, coriander,... Whatever you like)

  • 4 eggs

  • 1 tbsp olive oil

Preparation

  1. Courgette

    Wash the courgette and grate it on the biggest size. Let it rest in a sieve so the water can drain. Pat it dry with kitchen towels.

  2. Herbs

    Chop up the herbs

  3. Eggs

    Add some olive oil in a pan and let it get to a medium heat. Whisk the eggs together with the herbs and courgette and pour it in the pan. Turn the heat down and let it cook gently. Once the frittata is firm but not cooked yet at the top, put a lid on the pan. Now wait for the top to get completely cooked through and you're done!

Also joining the table?

This frittata is the perfect breakfast or lunch for adults as well. Just add some salt & pepper to taste. Sumac is also a great addition if you have it lying around.
