Cauliflower pasta with ham

This "fake pasta alfredo" is loaded with vegetables, instead of cheese and cream. If you'd like to make this dish vegetarian, replace the ham with some finely sliced shiitake mushrooms.

Ingredients for 2 portions

  • 50 g pasta

  • 100 g cauliflowers

  • 400 ml milk (full fat)

  • 0.5 tsp turmeric

  • 30 g lean ham

  • 1 tsp parmesan cheese

Preparation

  1. Cauliflower

    Boil the cauliflower in the milk. Once cooked, take the cauliflower out but save the milk.

  2. Blend the cauliflower (while still warm) with the cheese and turmeric and add some of the milk the cauliflower has been cooking in. It needs to be a thick, saucy consistency.

  3. Pasta

    Cook the pasta as indicated on the box.

  4. For the littlest eaters, you can blend the pasta together with the ham and the sauce until you get a puree. If you don't have a blender, chop the meat super fine and mash the rest with your fork. Leave it more chunky for the more advanced eaters.

Also joining the table?

If you would like to join, add a bit of cream, crushed garlic, soy sauce and extra parmesan cheese to the cauliflower puree. Finish with a good amount of black pepper.
