This puree combines the flavours that make a carrot cake so yummy!

Ingredients for 1 portion

  • 2 carrots

  • 0.25 tsp cinnamon

  • 0.25 tsp grated ginger

  • 1 pinch nutmeg

  • 1 tsp coconut oil

Preparation

  1. Peel the carrots, chop off the ends and cut it into medium sized pieces.

  2. Steam or cook the carrots in boiling water. Make sure they are well cooked and nice and soft. Drain them but save the cooking liquid.

  3. With your fork or a blender, turn it into a soft puree and make sure there are no lumps. You can add the spices and coconut oil at this point. You can add some cooking liquid to make it less thick. Look for the consistency of marmalade.
