Berry & beetroot popsicles

Popsicles are a really fun food to make and to eat. Having some popsicle molds is really convenient, especially because once you've tried making them, you'll want to make more. Not just for your kid, but also for you! If you don't have a mold, no problem. You could use some empty yoghurt or pudding cups and a little wooden stick. Just make sure to stick it in after it's been in the freezer for an hour or two. That way, it will stand up straight.

Ingredients for 2 popsicles

  • 1 beetroot

  • 150 g berries (blueberries, raspberries, blackberries, strawberries,... everything goes)

Preparation

  1. Beetroot

    you can either buy beetroots that are pre-boiled, nice and easy. If you don't, wash them well, cook them in a pot of boiling water until they're soft and then remove the peel.

  2. Berries

    Blend the berries together with the beetroot. Poor in the molds or yoghurt cups and place in the freezer for at least half a day

Sugar free can be nice, for adults as well. But if you feel like having the full popsicle experience, you can add the following to the mix before freezing it.

You will need to add:

  • 2 tablespoons of yoghurt
  • 1 tablespoon of agave or maple syrup
