Tzatziki, which is normally made with cucumber, is a great addition to many meals. The same can be said about this beetroot variation. Serve it with some grilled chicken or with a salad or use it as a spread on some bread.

Ingredients for 1 portion

  • 1 beetroot

  • 2 tbsp Greek yoghurt

  • 1 pinch oregano

  • 1 tbsp crumbled feta

Preparation

  1. Beetroot

    If you don't use pre-boiled beetroots, boil them and remove the skin once they're soft.

  2. Grate the beetroots or chop very finely.

  3. Yoghurt

    Stir in the yoghurt and oregano.

  4. Finish with some olive oil and the crumbled feta and give it a final stir.

This will be a favourite when you're making dinner. By simply adding pepper and salt - and a bit more feta, go ahead - this is the perfect buddy for meat, poultry, even fish or roasted veggies!
