You will need to add:
- 1/2 banana
- 2 tablespoons of yoghurt
- 2 teaspoons of maple syrup
- 1 tablespoons of mixed seeds or nuts
These are a tasty and healthy breakfast alternative for bread. Your little one get will some protein from the egg, fiber from the oats and some extra vitamins from the banana.
Banana
Mash the banana with your fork until smooth.
Eggs & peanut butter
Mix the mashed banana with the eggs, oats and peanut butter.
Bake
Add some neutral tasting oil in a pan (canola, corn, peanut, sunflower) and bring to medium heat. With a ladle, scoop little pancakes onto the pan. Use your fist as a reference for the pancake's size. Bake for about 3 minutes on one side, flip over and bake for another 3 minutes on the other side.
These pancakes are a great breakfast option for adults as well. We just have to add a bit of extra nutrition to start to day.
