If you're using canned artichokes, you can skip this step. If you're using fresh artichokes, cut the bottom part of the stem and the upper part of the leaves. Steam the artichokes or cook in boiling water until soft. This should take about 25 minutes. Now remove all the leaves and scrape out the inner fuzzy part until you're left with just the hearts.

Blend the artichokes with the cheese and olive oil until smooth.
