Artichoke dip with maize puffs

First of all, let's talk about how easy maize puffs (or carrot or any other kind) are. They will keep your little one entertained - which is great for those dull moments on the road - and they're a great vehicle for dips.
This artichoke dip is not only full of flavour but it's packed with nutrients! Artichokes really are nutritional powerhouses, rich in vitamins (especially C and K) and minerals. As if that weren't enough, they're one of the richest sources of antioxidants.

Ingredients for 1 portion

  • 200 g artichokes, canned (or fresh artichoke hearts)

  • 2 tsp soft goat's cheese

  • 1 tsp olive oil


  1. Artichokes

    If you're using canned artichokes, you can skip this step. If you're using fresh artichokes, cut the bottom part of the stem and the upper part of the leaves. Steam the artichokes or cook in boiling water until soft. This should take about 25 minutes. Now remove all the leaves and scrape out the inner fuzzy part until you're left with just the hearts.

  2. Cheese

    Blend the artichokes with the cheese and olive oil until smooth.

  3. Serve with the maize puffs or toasted bread cut into big strips
