Baby samosas
These samosas are quick and easy to make and super flavourful. You can serve them with some mango chutney on the side. If you have some potato mix left, you can eat it just like that, or with some chicken, for lunch.

Preparation
Peel the potatoes and cut into cubes. Steam or cook in boiling water until soft.
Peel the ginger and grate finely.
Add the spices in a shallow pan and bring to a low heat. After toasting the spices for 1 minute, add the olive oil, peas and ginger. Let it simmer for 2 minutes, then add the cooked potatoes and give everything a good stir.
Now prepare your dough by cutting little squares of about 10 by 10 cm. Scoop in 1 tablespoon of the potato mixture and close the parcel by bringing 1 corner to the opposite corner. Before closing, make the edges wet with some water. Now make little folds or press down with a fork, so it's sealed well.
Bake for 20 minutes in a 170°C/340°F oven, until golden.

This recipe is perfect for adults and young children as well. You may want to add a bit more seasoning and salt to your stuffing.
